Honestly, I can COMPLETELY relate, because the head is the HARDEST part, I think. I STILL have no clue how to get it completely round without having the seams on the side, so, my latest Derpy that I'm working on, looks 'asian', or something. XD I dunno...

I over stuff my heads a lot of times, so that I can get them to look right.
